Zucchini and Ricotta

Vegetarian

This is a great side dish to have with Risotto or pasta or a meat option.


Ingredients

4 Zucchini
1/2 Cup Ricotta Cheese
1/4 cup Parmesan Cheese
4 Basil Leaves
1/2 cup Marinara Sauce
1/2 cup Mozzarella Cheese
4 tbsp. Olive Oil
1/4 tsp. Salt

Instructions

1. Cut the Zucchini into thin strips
2. Place on cookie sheet. add some salt and drizzle with olive oil
3. Bake in the oven for 12 minutes at 400 F
4. mix ricotta with basil, oil and salt
5. place some of this mix on your zucchini and roll the zucchini
6. add a base of marinara sauce to a cooking dish
7. Add the Zucchini balls. Top with more marinara and mozzarella cheese
8. Bake for 15 minutes at 400
